Veggie Bullet Fun!
I’m sure you’re tired of hearing about it but this thing is AMAZING! I’m always on the go so the last thing I want to do is sit down and individually chop all my salads. Everyone knows that washing and chopping up vegetables is a big part of meal prep but some times it can be a drag. The Veggie Bullet has an amazing shred feature that has stepped up my salad game! Here’s one of the recipes I’ve come up with this week. Even if you don’t have a Veggie Bullet, give this recipe a try and you’ll fall in love!
Ingredients:
- 1/2 cup of kale, shredded
- 1/2 cup of cabbage shredded
- 4 radishes, sliced
- 3 carrots, sliced
- 1/2 sweet potato, sliced
- 2 hard boiled eggs, sliced or chopped
- 1 tbsp feta cheese
- 1/2 avocado
Directions:
Mix cabbage and kale thoroughly. Arrange all other ingredients on top and arrange to your liking!
The flavors of this salad are really amazing! You can add a bit of salt and pepper if you’d like. I really think the feta brings it all together. Prepping the vegetables early in the week make it really easy to bring this salad together. This is a simple salad that makes a great workweek lunch.
