Ranch Chili Recipe!

Now that the cold weather is hitting a lot of people, it’s time to bring out all the soups, stews, and chili recipes! I absolutely love thick and heart chili at the end of the day when the weather is cold. Texas winters are usually rainy as well so I feel like this recipe just hits the spot after running in from a cold shower.  Now there is some ranch in this but try it before turning your nose at it! It’s a very subtle flavor and it’s so good. Plus it’s the powder and not the regular dressing so it’s less weird. haha!

You can also throw this in a crockpot and make it your own!

Ranch Chili!

I actually made this up when I was modifying another recipe for the sake of time. You can cook many variations of  this to make it your own! Plus I feel most of the ingredients are very inexpensive which makes this such a good week day meal.

Ingredients:

  • 1 can of petite diced tomatoes (can sub Rotel for spicier chili)
  • 1 can of ranch style beans
  • 1 can of red kidney beans
  • 1 packet of ranch dressing/dip mix (I’ve used both and didn’t really find a difference in taste)
  • 1 tsp of chili powder
  • 1/2 pound of ground beef (can substitute turkey)
  • Shredded cheese – optional
  • Tortilla chips – optional

Directions:

  1. Cook ground beef until browned
  2. Drain beans and place in pot with beef over medium heat
  3. Add undrained can of tomatoes to pot
  4. Add seasonings and bring pot to simmer (if there’s not enough liquid in there for you, feel free to add half a cup of water)
  5.  Simmer for 15 minutes
  6. Plate and top with crushed tortilla chips and shredded cheese

This usually makes about 3-4 servings of about 1/2 cup each. My husband and I usually fight for seconds! This recipe is easy to double and you can definitely add more veggies. Let me know if you try it!
