Breakfast Egg Muffins
There’s nothing I love more than breakfast meals that can be made ahead of time! My mornings get hectic and after workouts, all I was to do is eat! I like to prep this on Monday evenings and then pop them in the microwave throughout the week. This is a breakfast recipe but of course you can eat it for extra protein throughout the day!
Breakfast Egg Muffins
Prep Time: 10 Minutes
Cook Time: 25 Minutes
Servings: 12 Muffins
8 eggs (can sub 4 eggs and 4 egg whites)
1 cup of spinach, chopped
2 tomatoes, sliced
12 turkey slices
1/4 cup of shredded cheese
Directions:
Preheat oven to 350 degrees.
Spray muffin tin with non-stick cooking spray.
Place a slice of turkey in each muffin tin.
Mix eggs, spinach, tomatoes, and shredded cheese in a bowl.
Divide mixed ingredients into each muffin tin.
Place in oven for 25 minutes.
Let cool and enjoy!
